Here is the recipe for my go-to breakfast mix of Roasted Sweet Potatoes and Apples. This recipe has been a critical part of each of my Whole30s and I have to fight my boys off when I make it (or make a huge double batch!)
I grab a scoop of this and add in a bit of protein (sausage/bacon/hardboiled eggs) for a delicious meal, as it’s super quick, easy and portable. Or you can have a little bowl of this if you want just a bit of something sweet, but you’re committed to banishing the Sugar Dragon and the hold he has on your brain! Enjoy!!
Roasted Sweet Potatoes & Apples
Ingredients:
2-3 sweet potatoes
3-4 apples (granny smith or other cooking apple, but really any you have on hand works)
cinnamon
all spice
nutmeg
avocado oil
1. Preheat oven to 400 deg
2. peel and cube sweet potatoes. Place in one baking dish and toss with enough oil to coat them and get the spices to stick. Use as much spices as you like – to taste. Place in oven for 30-40 min depending on the size of your pieces
3. repeat with apples in a separate baking dish and cook in same oven for 20-30 min. (so your sweet potatoes are in for 10 min longer while you prep your apples, then they both come out at roughly the same time.)
